Ingredients
1 | Approximately 2 lb of of chicken. |
2 | You need 3 cup of fresh grapefruit juice. |
3 | It's 1/4 cup of honey. |
4 | Prepare 1 1/2 tbsp of soy sauce. |
5 | Approximately 1 1/2 tbsp of fresh grated ginger. |
6 | It's 1 dash of cinnamon. |
7 | About 3 of scallions. |
8 | You need 1/2 tsp of kosher salt. |
9 | About 1/2 tsp of fresh ground black pepper. |
Cooking Instructions
Step 1 | juice the grapefruit, of about 3 grapefruits, until you have your 3 cups. |
Step 2 | peel and grate the ginger. |
Step 3 | thinly slice the scallions, save the upper darker green portion for garnish. |
Step 4 | combine all ingredients, except the chicken and whisk to blend. |
Step 5 | rinse chicken off, pat dry, place in a nonreactive dish and pour marinade over, reserving about 1 1/4 cup. |
Step 6 | let chicken sit covered in the refrigerator for 30 minutes. |
Step 7 | get grill lit and ready to cook some chicken while the chicken marinates. |
Step 8 | while grill is getting ready put remaining marinade into a saucepan and reduce down to half of the original volume, or as soon as it starts to get syrupy. |
Step 9 | grill the chicken, coating the last couple of minutes with the sauce that you've reduced down. |
Step 10 | plate your food, garnish the chicken with the scallions slices. |
Step 11 | serve with steamed broccoli, and black rice. |
